2 mangoes
16 raw shrimp
1 large cloves garlic
1 small hot pepper, chopped fine
1 piece fresh ginger, ¾ inch
2 Tbs olive oil
pinch of salt
zest and juice of 1 lime
herbs for garnish, basil or thyme
Peel mangoes and remove core.
Dice mangoes. Toss with grated ginger, pepper, oil, lime, and salt.
Cook shrimp in oil with garlic.
Place mango relish on plate and top with shrimp.
Garnish with basil chiffonade
